Ingredients:

• 2 oz Pisco
• 1 oz Fresh lime juice
• 3/4 oz Simple syrup
• 1 Egg white
• Angostura bitters for garnish

Instructions:

1. In a shaker, combine the Pisco, lime juice, simple syrup, and egg white.
2. Dry shake (without ice) for about 15 seconds to emulsify the egg white.
3. Add ice to the shaker and shake again for another 15 seconds.
4. Strain into a chilled cocktail glass.
5. Drop a few drops of Angostura bitters on top for garnish.
